Cherry Chicken

This recipe may not work for those of us who are very carb sensitive, but it is tasty, easy, and high in protein!

5 boneless, skinless chicken thighs
2 Tbsp. butter
1/3 C cherry preserves (I use the Polaner All Fruit, with no added sugar)
1/3 C brown mustard
10 finely sliced scallions

Melt butter in large, heavy skillet. Season chicken with salt and pepper, and put in hot skillet. Brown 5 minutes on each side.

Remove browned chicken to plate, and cover with foil.

Put scallions in pan, and saute until just beginning to tenderize (reserve a few raw ones for garnish, if you like). Once the scallions begin to get tender, add the cherry preserves and mustard, and whisk together. Heat until pan is deglazed, preserves are "loose", and preserves and mustard are well mixed.

Spoon sauce over chicken. Garnish with raw scallions if desired.

Quick, yummy, inexpensive, good protein!
