I did not write or configure any of the recipes posted here. I am not a chef. I copied and pasted the recipes from public DS forums to make them easier to access and search.

Lemon Preserves

6 Meyer Lemons
1 c salt
1 tbl peppercorns
2 bay leaves
1 tbl coriander seed
2-3 tbl lemon juice

Slice Lemons into halves, horizontally. In a half, quarter slightly, but do not split the lemon into quarters.

In bowl, mix seasonings, aromatics and lemon juice.

In mason jar, layer lemon halves and salt mix until full. I did two jars, 3 halfs in each 6 oz jar.

Seal, label, store dark for 30 days. Turn, refrigerate for another 3 weeks.

You'll see the juice start to come out - nothing's going to live in the acid and salt jar. :P Cinnamon, cloves, and other aromatics are beautiful here - to your taste. Rinse quarters well when you do use them. Do not have cut or chopped hands when you use them. :P You will cry. 

Use the zest in dishes, condiment. You can use the drained pulp (be careful, it's all salt) in drinks.
