Scramble, II -
- 4-5 eggs
- 1 tbl creme fraiche
- 1 oz half-half
- salt/pepper/onion
- 10-12 20/25 cooked shrimp
- clams/mussels cooked
- cooked cheese grits
In individual ramekins or pie dishes, spray non-stick. Add 2-3oz of minced shrimp/clams/mussels. Layer 2-3 tbl of cheese grits.
Whip eggs, creme fraiche, half/half, seasonings, aromatics. Pour 2-3 oz over the layered mix, until cover.
Bake in hot oven, 415 degrees, for approximately 10-15m, until eggs puff and are golden brown. In last minute, sprinkle with parmesan cheese, cook on broil for 30s.
Serve hot, with a side of chilled fruit.
