Ingredients
1/2 cup sweetened, flaked coconut
1 cup salted peanuts
1/4 tsp pepper
1 egg
2 tsp. grated fresh ginger or 1 tsp powdered ginger
1 1/2 lb boneless, skinless chicken breast halves, cut into 1-inch strips
Directions
Heat oven to 400 degrees. Spray a baking sheet with cooking spray. Very finely chop coconut and peanuts in food processor. Stir in pepper and transfer to plate. In a bowl, mix egg and ginger. Dip chicken pieces in egg mixture, then press into peanut mixture. Arrange on baking sheet. Spray with cooking spray. Bake 20 mins, until chicken is brown and cooked through.
