Chicken cordon bleu

2 c. cubed cooked ham
4 c. cooked chicken (or turkey)
1 c. (4 oz) swiss cheese, shredded
1 large onion, finely chopped

1/3 c. butter, cubed
1/3 c. all-purpose flour
1/8 t. ground mustard
1/8 t. ground nutmeg
1 3/4 c. milk (or half and half)
TOPPING: (I forgo the bread crumbs and just sprinkle cheese)
1 1/2 c. soft bread crumbs
1/2 c. shredded swiss cheese
1/4 c. butter, melted

Saute ham for 4-5 mins or until brown, drain, pat dry.   In a greased baking dish, layer the turkey, cheese and ham, set aside.
Saute onion in butter until tender.  Stir in the flour, mustard, nutmet until blended.  Gradually stir in milk, bring to boil, cook and stir for two mins until thickened.  Pour over ham.  Combine topping ingredients and sprinkle over top.  Bake, unocvered at 350 for 25-30 mins.
** I looked up a couple of other recipes for this on the internet, and saw some that used cream of chicken soup instead of your own white sauce.    As stated in an earlier post, I've gotten kind of weird about some canned foods since my DS (I swear I can taste the  metal in the can!) so I make my own white sauce.  Still, I'd be willing to give it a whirl just to make the recipe quicker and see how it turns out.
