I did not write or configure any of the recipes posted here. I am not a chef. I copied and pasted the recipes from public DS forums to make them easier to access and search.

stuffed French toast

16 slices low-carb bread (I use Arnold's Bakeries, which I have to travel 72 miles to find)
1-2 pkgs cream cheese (I did two just for shits and giggles) softened
1/3 c. splenda
1/3 c. sugar free strawberry jam (Walmart makes a decent one)
12 eggs
1 1/2 c. half and half
Pecans
Splenda
Cinnamon

Okay - I'm not into exact amounts - so these figures are pretty arbitary....but they worked for me.

Spray the bottom of a 9 x 11 pan with Pam.   Lay eight slices of bread to fill bottom of pan.   I'd trim the crusts next time - I think it would have been better that way.

Beat the cream cheese together with 1/3 c. splenda and the jam.  Spread that over the slices of bread.    Lay eight more slices of bread over that cream cheese.   Beat together eggs and half and half and pour over bread and cream cheese.    Cover and refrigerate overnight.   

Before baking, sprinkle chopped pecans, splenda and cinnamon over top.  Bake at 350 for 30 mins.    Let sit a few minutes to firm up. If you're really the creative type, slice some fresh strawberries up on top. Oh. My. God.
