Yields: About 8 cups or 12 main-dish servings

1 medium onion, chopped
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup tomato paste
2 tablespoons sweet paprika
2 tablespoons Worcestershire sauce
2 tablespoons yellow mustard
1 1/2 teaspoons salt
1 1/4 teaspoons ground black pepper
4 pounds boneless pork shoulder blade roast (fresh pork butt), cut into 4 pieces
12 soft sandwich buns or ciabatta rolls, warmed
Dill pickles and potato chips (optional)
Hot sauce (optional)
1. In 4 1/2- to 6-quart slow-cooker pot, stir onion, ketchup, vinegar, brown sugar, tomato paste, paprika, Worcestershire, mustard, salt, and pepper until combined. Add pork to sauce mixture and turn to coat well with sauce.
2. Cover slow cooker with lid and cook pork mixture on low setting as manufacturer directs, 8 to 10 hours or until pork is very tender.
3. With tongs, transfer pork to large bowl. Turn setting on slow cooker to high; cover and heat sauce to boiling to thicken and reduce slightly.
4. While sauce boils, with 2 forks, pull pork into shreds. Return shredded pork to slow cooker and toss with sauce to combine. Cover slow cooker and heat through on high setting if necessary.
5. Spoon pork mixture onto bottom of sandwich buns; replace tops of buns. Serve sandwiches with pickles, potato chips, and hot sauce if you like.

Shredded crock pot pork
-Take a pork roast and cook in crock pot all day with a jar of salsa
-Shred it and use for a base for tacos, or taco salads.
I make this and freeze it in individual bags, I reheat this with shredded cheese on top for lunch a lot, and eat with sour cream and salsa.

If you have Costco where you live, get a package of Kirkland pulled smoked pork. It's 2 lb. for ten bucks.
Place in crockpot. Whack up one large onion and one head of cabbage. Crock it good.
After crocking, stir in a pint or so of sour cream and serve.

Crockpot Pulled-Pork Fajitas
1 2 1/2 pound pork boneless loin roast
1 medium onion -- thinly sliced
2 cups barbecue sauce
3/4 cup salsa
3 tablespoons chili powder
1 tablespoon Mexican seasoning
9 flour tortillas (substitute low carb or corn. I can have any causes too much gas)
Remove excess fat from pork. Place pork in 3 1/2 to 6 quart slow cooker; arrange onion on top. Mix remaining ingredients except tortillas; pour over pork. Cover and cook on low heat setting 8 to 10 hours or until pork is very tender. Remove pork; place on large plate. Use 2 forks to pull pork into shreds. Pour sauce into bowl; stir in pork. Spoon filling onto tortillas; roll up. 1 serving = 395 calories/fat 15g/cholesterol 80mg/sodium 790mg/carbohydrate 35g/fiber 4g/protein 34g
