Warning: I am lazy and hate to cook. That said...
Drop chicken breasts in a crock pot (I know you said yours were thawed already, but you can also do this from frozen). Dump a jar of salsa on top. Add a box of cream cheese. Cook overnight or during the day while at work. Stir, then dump in entire bag of shredded cheese (cheddar, monterey jack, or whatever Mexican blend was on sale last week...) or two. Re-cover until cheese is melted. Scoop out and add a big blob of sour cream on top.
